Cellulose
Polysaccharides from cellobiose, which consists of two glucose molecules (see glucose). Occurs in plants as a structural polysaccharide with high stability. It can be metabolised by intestinal bacteria, although this only occurs in the large intestine in man. Cellulose is therefore of only limited nutritional value. Cf. roughage.
